HARVEST

The 2016 harvest is well underway. My husband has been busy this week combining corn. Hopefully he will finish up this week. I just love harvest time. I made a huge pot of home made Chicken Vegetable soup with home baked corn bread and had it ready for dinner last night when he came in for the evening.

ROOFING

I've been helping my husband with roofing on the drive shed. We started putting up the 26.5 ft sheets of steel yesterday and we just finished. Thank goodness. We are glad it is done. Now to finish the sides. Won't be a hard as the roof though. This is a picture of the second last piece getting screwed down.

Blessings,

HARVEST SQUASH AND APPLE SOUP

I just love this time of year and all the bounty that goes with it. The apples and squash are ripe and I am making a pot of my squash and apple soup. Thought I would share the recipe. It is delicious. I make this every year. It is a recipe from Foodland Ontario.
I don't add the pumpkin seeds as it makes my Colitis flare up.

Ingredients:

2 Ontario Onions, chopped
1 tbsp (15 mL) butter
1 large Ontario Butternut Squash, peeled and cubed (about 5 cups/1.25 L)
2 Ontario Apples, peeled, cored and cubed
2 cloves Ontario Garlic
4 cups (1 L) sodium-reduced chicken or vegetable broth
1 tsp (5 mL) chopped fresh Ontario Thyme Leaves
1 tsp (5 mL) salt
1/4 tsp (1 mL) pepper
3 tbsp (45 mL) Ontario Maple Syrup
1/2 tsp (2 mL) ground nutmeg
Pumpkin seeds

Preparation:

In large pot, cook onions in butter over medium heat until softened, about 5 minutes. Add squash, apples, garlic, broth, 1 cup (250 mL) of water, thyme, salt and pepper; bring to boil. Reduce heat, cover and simmer for about 20 minutes or until squash is tender. Let cool slightly. In batches, purée soup in blender until smooth. Return to pot and stir in maple syrup and nutmeg. Reheat soup until hot. Serve garnished with pumpkin seeds.

MOVING FURNITURE

Today I decided to move my Possum Belly bakers' table from in front of the kitchen window to the other side of the table in front of the sink. Didn't know how I would like it, but I really do, so it is staying. Didn't think my husband would like it, but he does. Here is a couple of pictures.
Hope you all have a great weekend.
Blessings,
~Janet
