CRANBERRY BANANA LOAF


This is a great recipe. I just made this to take to our Quilters' Guild meeting tomorrow. Our group is in charge of refreshments for our break this month. It is a quick easy recipe.
TIP: If you have any over ripe bananas, just peel them and put into ziplock bags and freeze them.
Take them out for a recipe that calls for them and thaw them out and mash them.

RECIPE
1/4 CUP BUTTER
1     CUP GRANULATED SUGAR
2    EGGS
3    MASHED RIPE BANANA
1    CUP CHOPPED CRANBERRIES

1 1/2 CUPS ALL PURPOSE FLOUR
1 1/2 TEASPOON BAKING POWDER
1/2    TEASPOON BAKING SODA
1/2    TEASPOON SALT
1/2    TEASPOON CINNAMON
1        PINCH OF CARDAMON

Combine butter, sugar, and 1 egg in mixing bowl. Beat until smooth. Beat in second egg. Stir in banana and cranberries.
 
In another bowl, combine flour, baking powder, soda, salt and cinnamon and cardamon.
Stir well. Add all at once to banana mixture. Stir only to moisten. Scrape into a 9x5x3 inch
loaf pan (greased). Bake in a pre-heated 350 degree oven for 1 hour.
Let stand for 10 minutes. Remove from pan and cool on wire rack.

  1. Wow, all afternoon I have been searching through my cookbooks for a recipe using bananas and cranberries. I will certainly give your recipe a try, it looks delicious. By the way I love your stove.

  2. I just love banana loaf but have never made it with cranberries! Can you use craisins, do you think? I have also never used cardamon...do I live a shallow life or what?? LOL

  3. Hi Nancy.
    Believe it or not, I just started to use Cardamon. I was at a Herb Farm with a friend of mine just before Christmas and she had homemade apple loaf and she had used Cardamon in it and I just loved the taste, so I bought some from her. I think if you used craisins, you may have to soak them first.
    Don't worry, you're not the only one who lives a sheltered life :)

    That is a delicious recipe. I had cranberries left over from Christmas and just put them in the freezer and took them out for this recipe.
    I have made three of these since Christmas.
    I LOVE my stove too.
    My SIL and my sister have stoves just like it.

  4. I just took three cranberry banana breads out of the oven, absolutely DELICIOUS! I have to confess I did not have any cardamon on hand(I am not sure I have ever purchased cardamon) but did improvise with fresh orange zest. By the way is that a chicken cutting board?

    That is a Turkey Cutting board! My sister gave it to me for Christmas and I just love it. I had a pig one that used to be my mother's and it was about 45 years old, so I have retired that. Glad the loaves turned out well.
    Mine went over big at our Quilters' Guild meeting. I thought I might have had some left over to bring home for DH, but the Ladies cleaned me out....LOL.
